I would describe this signature dish from Surabaya, East Java as a well-balanced sweet and salty flavor that makes this dish umami. There is an ingredient in this dish called "Petis" a caramelized shrimp paste that adds up another level of flavor and gives the dish an amazing aroma. We braised the meat slowly until it's cooked and tender then we put the Petis sauce at the end to finish.
